Sweet Potato Breakfast Burritos
Ingredients:
- 1 tablespoon avocado oil
- 1/2 large sweet potato, peeled and finely chopped
- 1 Triple Quinoa & Kale Salad recipe (or 1 cup cooked quinoa mixed with 1/2 cup chopped kale)
- 1 package (14 ounces) firm tofu, patted dry and chopped
- 1/2 medium red bell pepper, finely chopped
- 1/4 cup hot sauce, plus additional for serving
- 12 (6-inch) thin white corn tortillas
- 1 jalapeño pepper, thinly sliced
- 1/2 cup roasted unsalted pepitas
- 2 limes, cut into wedges
Instructions:
- Heat avocado oil in a large skillet over medium heat.
- Add sweet potato and cook for 10 minutes or until golden brown and tender, stirring occasionally.
- Add quinoa salad, tofu, and bell pepper. Cover and cook for 8 minutes or until vegetables are tender, stirring occasionally.
- Stir in hot sauce and remove from heat.
- Warm tortillas in the microwave or oven.
- Fill tortillas with sweet potato mixture and top with jalapeño, pepitas, and lime wedges.
Banana Pancake Bites with Mango and Strawberry Dips
Ingredients:
- 1/4 cup chopped mango
- 2 tablespoons raw cane sugar
- 1/4 cup chopped strawberries
- 4 ripe bananas, peeled and cut into 1/2-inch pieces
- 1 cup protein pancake and waffle mix
- 2 tablespoons natural buttery spread with olive oil, melted

Instructions:

- 1/2 tsp kosher salt
- 2/3 cup 1% milk
- 1 tbsp apple cider vinegar

- 1 tsp vanilla
- 1 cup mashed banana
- 1/2 cup chocolate chips or other mix-ins (optional)
Instructions:
- Preheat oven to 350°F.
- Line a muffin pan with paper liners.
- Combine dry ingredients in a bowl and wet ingredients in another.
- Add wet ingredients to dry ingredients and mix until just combined.
