"This time of year is our busiest," Albin shares. "We bake hundreds of king cakes every day to meet the demand." King cakes are an integral part of Mardi Gras celebrations, a sweet indulgence that fosters camaraderie and enhances the revelry. "It’s become an obsession, a tradition that people eagerly anticipate each year," Albin remarks.

Yet, the soaring cost of ingredients, particularly eggs, is dampening the celebratory spirit. While Albin has resisted raising the prices of his king cakes, he harbors a glimmer of hope that egg prices will stabilize soon. "In some supermarkets, you can’t find eggs for less than $10 or even $12 a dozen," Albin laments. "It’s a perplexing situation."

The bird flu outbreak, which has decimated millions of chickens, is the primary culprit behind the skyrocketing egg prices. Osman Kazan, the director of the Business Analytics Program at Tulane University, believes that consumers may need to brace themselves for a new reality when it comes to egg prices.

"We’re unlikely to revert to the extremely low prices we’ve seen in the past," Kazan asserts. "This elevated pricing is likely to persist for some time, becoming the new norm." Kazan predicts further increases in egg prices, with no respite in sight until well into the summer months.

In light of these challenges, small businesses like Maurice French Pastries are left navigating a precarious balancing act, striving to maintain their profit margins amidst rising ingredient costs without compromising the quality of their products.
